Onions, chicken, forty pounds of prep before anyone orders a thing. The first thing the cook reaches for isn't a knife. It's a pair of gloves. If they tear on the first bone, that's a hand-wash, a new pair, and a line already falling behind.
The morning rush
Forty coffees in twenty minutes. Every one gets a cup, a lid, a sleeve, and a customer walking out the door with it. One lid that pops off in a car and that's the morning somebody tells their coworkers about.
Lunch goes out the door
Half of today's lunch will never see the dining room. It rides in a bag, in a car, up an elevator. Your food leaves the kitchen perfect. Whether it arrives that way depends on the container.
Dinner service
Candles lit, tables full. The guest unfolds a napkin before the first bite. It's the first thing they touch at the table, and it tells them what kind of night this is going to be.
Last one out
Chairs up, floors mopped, restrooms stocked for tomorrow. The part of the day nobody posts about, and the part every health inspector notices first.
